Step back in time with the “Circular Renaissance” themed dinner, set in the evocative setting of Manifattura dei Marinati in Comacchio. An exclusive gastronomic experience blending history, innovation, and sustainability.
A menu that celebrates tradition with a modern twist
Celebrated Italian chef Igles Corelli, holder of 5 Michelin stars, presents a refined dinner inspired by the zero waste philosophy and the principles of circular economy, ideas that were already present at the Estense court during the Renaissance.
Menu:
- Crispy cannolo filled with sturgeon and savoy cabbage, saffron sauce and arugula oil: a dish that evokes the splendor of the ducal banquets, using sturgeon, a symbol of the Delta region.
- Tortelli stuffed with wild duck, toasted butter, cheese sauce, and herb oil tell the story of the hunting traditions of the wetlands.
- Chicken breast stuffed with almonds and pancetta, served with a citrus sauce and spiced apple compote, recalling the Arab influences that, through Sicily, reached the courts of the Po Delta.
- Sour cherry and gold tart, a finale inspired by the theatricality of the Renaissance, so beloved by the nobles of the time.

This event is part of the Renaissance Banquets series, a calendar of themed dinners and cultural experiences promoted within the framework of the Festina Lente project.
Funded by the Ministry of Tourism, this project is aimed at enhancing municipalities with strong tourism and cultural appeal, especially those hosting UNESCO World Heritage Sites or belonging to the UNESCO Creative Cities network.
