Snail salad
Mackerel garum, vanilla-flavored celeriac cream, valerian sauce
Maccheroni pie with white ragout of wild duck and sweetbreads, pine forest truffle béchamel.
Rice with eel broth, creamed with maritime pine butter and a sauce of bitter herbs from the pinewood.
“A Stroll in the Floodplain”: eel foie gras semifreddo, sour cherries, wild blackberries, elderflowers
White chocolate “soil” with dried fruit and pink pepper.
